How alkaline degreasers break down cooking fat

Cooking oils and animal fats are triglycerides. Put a strong enough alkali against a triglyceride, add warmth, and the fat molecule splits into glycerol and fatty acid salts. Those salts are soaps, and soaps dissolve in water. An alkaline degreaser does not so much lift grease off metal as convert it into something that rinses. This is saponification, the same chemistry that has made soap for centuries.
Three things control how fast it happens: how alkaline the product is, how warm the surface and solution are, and how long the two stay in contact. Warmth matters more than people expect. The same product works noticeably faster on a hood still warm from service than on a cold one the next morning.

Where solvents belong, and where they do not

Does vinegar remove grease? An honest answer
Vinegar removes light, fresh grease film and does very little to hardened deposits, because it is an acid working against a problem that responds to alkalis.
Vinegar is dilute acetic acid, typically around five percent. That makes it useful for a real but specific list of jobs: dissolving mineral scale and hard water spots, breaking up sticky sugary residue, cutting light films, and neutralising some odours. None of those is the same problem as grease. Against cooking fat, vinegar has no saponifying action at all. Aluminium is the opposite. It is amphoteric, meaning strong alkalis and strong acids both attack it, and the alkaline attack catches people out because the product is otherwise ideal. The visible result is a chalky grey or blackened surface. The lasting result is roughened metal that holds grease more tightly than before. Dwell time beats scrubbing, every time
Chemistry needs contact time. Effort applied before the product has worked is effort mostly wasted.
The most common mistake is spraying a surface and immediately attacking it with a pad. Saponification is a reaction, and reactions take time. Spray and wait, and the deposit is soft when you come back. Spray and scrub, and you are grinding hardened grease around with a cloth.
