Are Kitchen Exhaust Fans Required?

That distinction explains a lot of confusion. Homeowners expect a yes or no, and what they get from a building department is a question about the design: what ventilation the dwelling provides overall, what the appliance is, and whether the work is new construction or a renovation to an existing kitchen. A recirculating range hood that filters and returns air to the room is a different thing from a ducted hood that moves air outside, and a house may satisfy its ventilation obligations through a route that is not the hood at all.

The reliable route for a specific project is the building department handling the permit. What can be said generally: kitchen ventilation is treated as necessary rather than optional in a dwelling, and the way it is met is more flexible than people assume.

What is not in doubt is the practical case. Cooking releases moisture, smoke, odour, fine particulate, and grease. Ventilating it outside keeps that load off cabinets, ceilings, and lungs, and a recirculating unit does considerably less about moisture and heat than a ducted one. None of that is a code argument. Are exhaust hoods required over commercial cooking appliances?

Yes. NFPA 96 applies to commercial cooking operations producing grease-laden vapours and requires those appliances to be served by a listed hood and a grease exhaust system built and maintained to the standard.

Here the answer is firm, and the reason is fire behaviour rather than air quality. Grease-laden vapour condenses along the whole exhaust path, and a fire on a cook line that reaches a loaded duct has a fuel supply running through the structure of the building. The standard exists to keep that path built, arranged, and maintained so a cook line fire stays a cook line fire.

The word "listed" is doing specific work. A commercial hood is a tested assembly rather than a large metal box, and it is required to work as part of a system: the hood itself, grease-removal devices such as baffle filters, a grease duct with the right construction and access, an exhaust fan, and fire suppression appropriate to the appliances underneath. Substituting a residential range hood over commercial equipment does not satisfy this, whatever its airflow rating says.

Who enforces the requirement in Barrie?
